Recipe using Saint-Nectaire: Salmon with Saint-Nectaire cheese

- 4 salmon steacks
- 100 g Saint-Nectaire cheese
- 50 g white wine
- 50 g Gruyère cheese
- 1 shallot
- cream
- 1 egg
- garlic
- Heat the grill.
- Thinly slice the shallot, crush the garlic and sprinkle over the grill pan.
- Quickly fry the salmon steacks o seal them, then place them in the grill pan.
- Mix the egg, the Gruyère and the Saint-Nectaire cheeses in a food processor.
- Pour this mixture over the salmon and place under the grill for 20 mins.
- 5 mins before the end, pou the cooking juices into a saucepan, add some fish stock and pour the cream and reduce.
Conseils
You can add a pinch of star anise or a drop of pastis to the sauce.
