Recipe using Saint-Nectaire: Saint-Nectaire cheese and tomato tartlets

- 1 packet short crust pastry
- 1 Saint-Nectaire cheese
- 6 firm tomatoes
- 4 tsp golden breadcrumbs
- 30 g butter + 20 g for greasing
- 2 tsp chopped flat-leaved parsley
- 20 g flour
- salt
- pepper
- Preheat the oven to 180°C.
- Roll out the pastry on a floured work surface.
- Cut 4 rounds of pastry to line the tartlet tins.
- Slice the Saint-Nectaire cheese, taking off some of the crust. Place on the pastry.
- Slice the tomatoes and place them on kitchen towel, sprinkle lightly with salt.
- Leave the tomatoes to drain for 10 mins, turning them over once.
- Then divide them between the tartlets, season with salt and pepper,add breadcrumbs and the butter cut into cubes.
- Cook for 20-25 mins until the pastry is golden brown.
- Take the tartlets out of their tins and sprinkle with parsley.
- Serve hot with a green salad.
