Ingredients
  • 1 packet short crust pastry
  • 1 Saint-Nectaire cheese
  • 6 firm tomatoes
  • 4 tsp golden breadcrumbs
  • 30 g butter + 20 g for greasing
  • 2 tsp chopped flat-leaved parsley
  • 20 g flour
  • salt
  • pepper
Preparation
  1. Preheat the oven to 180°C.
  2. Roll out the pastry on a floured work surface.
  3. Cut 4 rounds of pastry to line the tartlet tins.
  4. Slice the Saint-Nectaire cheese, taking off some of the crust. Place on the pastry.
  5. Slice the tomatoes and place them on kitchen towel, sprinkle lightly with salt.
  6. Leave the tomatoes to drain for 10 mins, turning them over once.
  7. Then divide them between the tartlets, season with salt and pepper,add breadcrumbs and the butter cut into cubes.
  8. Cook for 20-25 mins until the pastry is golden brown.
  9. Take the tartlets out of their tins and sprinkle with parsley.
  10. Serve hot with a green salad.
