Recipe using Bleu d’Auvergne: Pear and Bleu d’Auvergne cheese tart

- 4 rounds of flaky pastry 12 cm in diameter
- 200 g Bleu d’Auvergne cheese
- 4 ripe pears
- Bake the flaky pastry blind between 2 baking tins so that it does not rise.
- thinly slice the Bleu d’Auvergne cheese and place the slices evenly on the pastry.
- Thinly slice the pears and place them in a rosette on the pastry.
- Place in hot oven, approx 200°C for 2-3 minutes.
- Serve with salad and lardons as a starter or alone as a cheese course.
Conseils
Serve with a white Coteau du Layon (wine from the Anjou region).
