24 brochettes
- 250 g Salers PDO
- 150 g Auvergne dry sausage
- 8 cherry tomatoes
- 2 slices Auvergne raw ham
- 8 pitted prunes
- 1 white pudding
- 1 reinette apple
- 20 cl dry cider
- 100 g honey
- Preheat the oven at 356°F.
- Cut the Salers in big cubes allocated in 3 lots and dice the sausage.
- Intercalate on 8 woodden skewers 1/3 of he cheese, the dry sausage and the tomates. Put aside in the fridge.
- Cut the raw ham in 8 parts. Intercalate the ham, 1/3 of the cheese and the prunes on 8 skewers.
- Intercalate the last third of Salers cheese, the white pudding and the diced apple.
- Melt the honey in a pan, pour the cider, bring to the boil, whip for 2 minutes. Reserve in a sauce-boat.
- Put the last 2 series of brochettes in the oven for 2 minutes.
- Pour the sauce over the brochettes. Serve as an aperitif.
