Ingredients
  • 250 g Salers PDO
  • 150 g Auvergne dry sausage
  • 8 cherry tomatoes
  • 2 slices Auvergne raw ham
  • 8 pitted prunes
  • 1 white pudding
  • 1 reinette apple
  • 20 cl dry cider
  • 100 g honey
Preparation
  1. Preheat the oven at 356°F.
  2. Cut the Salers in big cubes allocated in 3 lots and dice the sausage.
  3. Intercalate on 8 woodden skewers 1/3 of he cheese, the dry sausage and the tomates. Put aside in the fridge.
  4. Cut the raw ham in 8 parts. Intercalate the ham, 1/3 of the cheese and the prunes on 8 skewers.
  5. Intercalate the last third of Salers cheese, the white pudding and the diced apple.
  6. Melt the honey in a pan, pour the cider, bring to the boil, whip for 2 minutes. Reserve in a sauce-boat.
  7. Put the last 2 series of brochettes in the oven for 2 minutes.
  8. Pour the sauce over the brochettes. Serve as an aperitif.
